Grandma's Savoury Pudding

This is an alternative to stuffing and is delicious with roast pork or chicken. Serves 4 -6 as a side dish

Ingredients

230g / 8oz breadcrumbs

56g / 2oz suet

56g / 2oz oatmeal

284ml / 1/2 pint milk

1 onion

2 tsps sage and marjoram or thyme OR mixed herbs

1 or 2 eggs for consistency

Salt and pepper

 

Method

  1. Chop and boil the onion till transparent.

  2. Boil the milk and pour onto the breadcrumbs and oatmeal and leave to soak. Add a little more milk if mixture is too stiff.

  3. Mix in the suet, onion, herbs, seasoning and beat in the egg(s). You want a "cake mix" consistency.

  4. Place the mixture in an overproof dish (I usually use a Pyrex souffle dish) and bake for about 45 minutes at 180°C / 360°F / Gas Mark 4.
