Cheesy Veg Bake

Serves 3-4 as a side dish

Ingredients

100g Courgette (diced)

100g Carrot (diced)

100g Leek (diced)

1 Shallot or Small Onion (diced)

*50g Mushrooms (diced)

*100g Bacon lardons (diced)

200g Potatoes (peeled and roughly chopped)

Milk

Cooking oil

Butter

Grated Cheese

Parmesan

 

Method

  1. Boil the potatoes for 20 minutes.

  2. Add the leek, onion, carrot, *mushrooms, courgette and bacon lardons to a frying pan with a little oil, and fry gently until soft.

  3. Mash the potatoes, adding milk and butter to make a slightly sloppy mix, then add most of the grated cheese.

  4. Place the mixed vegetables in the base of a casserole dish.

  5. Add the mashed potatoes as a layer on top, roughen the surface with a fork and sprinkle more grated cheese and parmesan on top.

  6. Bake in the oven at about 180C / 360F / Gas Mark 4 for about 30 minutes till golden brown.
