Serves 3-4 as a side

Ingredients
100g Courgette (diced)
100g Carrot (diced)
100g Leek (diced)
1 Shallot or Small Onion (diced)
*50g Mushrooms (diced)
*100g Bacon lardons (diced)
200g Potatoes (peeled and roughly
chopped)
Milk
Cooking oil
Butter
Grated Cheese
Parmesan
Method

Boil the
potatoes for 20 minutes.

Add the
leek, onion, carrot, *mushrooms,
courgette and bacon lardons to a
frying pan with a little oil, and
fry gently until soft.

Mash the potatoes, adding milk and
butter to make a slightly sloppy
mix, then add most of the grated
cheese.

Place the mixed vegetables in the
base of a casserole dish.

Add the mashed potatoes as a layer
on top, roughen the surface with a
fork and sprinkle more grated cheese
and parmesan on top.

Bake in the oven at about 180C /
360F / Gas Mark 4 for
about 30 minutes till golden brown.
