Step 1
Hang the onions upside down to
dry thoroughly. This will probably take about 4 weeks. They are ready for the next step when the leaves
are dry and papery.

Step 2
Trim the roots close to to the
bulb but do not cut into the base-plate of the bulb as this can
allow disease or rot to set in.

Step 3
Trim the stem of the onion leaving around 5cm /
2" .
You may wish to leave longer stems if you intend to plait or
string your onions.

Step 4
Peel back any loose or split
skins. This will help prevent disease or rot, and help them
store longer. If any of the bulbs are slightly soft, use them
immediately or discard them. These are not suitable for storage. |

Step 5
I store my onions in ventilated
plastic crates - old mushroom or vegetable crates are perfect.
Alternatively you can plait or string onions and hang them up. |

Step 6
For long-term storage, place the
crates in a cool, dark place with good ventilation. A shed,
garage or root cellar is ideal. Check regularly for any signs of
rot or disease and either immediately use or discard any that
are affected. |
