				Step 1 
				
				Choose potatoes which are around 
				the size of a hen's egg. Do not select tubers which show any 
				sign of disease or damage.

				Step 2 
				
				Place the potatoes in a cardboard 
				egg box. (They may sweat and rot in a plastic one).

				Step 3 
				
				Make sure the egg boxes are 
				labelled with the variety name. The empty mushroom crates allow 
				good ventilation and can be stacked.

				Step 4 
				
				Store somewhere cool and dark 
				with good ventilation - a shed or garage is a good option unless 
				you have a root cellar.  |

				Step 5 
				
				If you need, cover the potatoes 
				with a cardboard box to keep out light.   |

				Step 6 
				
				Check the potatoes every week or 
				two for signs of pests or disease. Take them out of storage when 
				you are ready to chit them the following spring.
